Tamarind Scotch Bonnet Wings (Crispy Oven or Air-Fryer)

Tamarind Scotch Bonnet Wings (Crispy Oven or Air-Fryer)

Oven or air-fryer. Tangy, sticky, game-day wings with a grown-and-spicy edge.

Serves 4  •  40 min  •  Heat: 🔥🔥🔥 Bold-Hot

INGREDIENTS

  • 2 lb chicken wings, split

  • 1 tbsp baking powder (for crispy oven wings)

  • ½ tsp salt

  • ½ tsp garlic powder

  • 6 tbsp Hot Tings Tamarind Scotch Bonnet

  • 2 tbsp honey

  • 1 tbsp melted butter

  • 1 tsp soy sauce

  • Sliced scallions & sesame seeds (garnish)

METHOD

  1. Pat wings very dry. Toss with baking powder, salt and garlic powder.

  2. Oven: 425°F on a rack ~40 min, flipping once, until crisp. (Air-fryer: 400°F ~22 min, shaking halfway.)

  3. Meanwhile whisk Tamarind sauce, honey, melted butter and soy sauce into a glaze.

  4. Toss hot wings in the glaze until fully coated.

  5. Garnish with scallions and sesame. Serve with extra Tamarind for dipping.

CHEF'S TIP:
Baking powder (not soda) is the trick to crispy oven wings — it raises the skin pH so it browns like fried.
